    Daiquiri

    FreshClassicHomemade

A fresh classic that lets the flavour of your own rum take centre stage.

    Ingredients

    • Your rum60 ml
    • Fresh lime juice30 ml
    • Sugar water15 ml
    • Ice cubesfor shaking
    • GarnishLime wheel
    • GlassMartini / coupe

    Method

    1. 1Chill the martini or coupe glass in advance with ice.
    2. 2Add your rum, lime juice and sugar water to a shaker. Fill generously with ice and shake hard for 10-12 seconds.
    3. 3Pour without ice into a glass and garnish with a lime wheel.

    Bartender tip

Make your own sugar water in a ratio of 2 parts sugar to 1 part water. Use for example 100 g of sugar and 50 ml of boiling water. Stir until the sugar has fully dissolved and let it cool. That gives you enough for about 7 cocktails.

    Dark & Stormy

    SpicyRefreshingHomemade

A bold classic with ginger beer and lime.

    Ingredients

    • Your rum50 ml
    • Juice of half a lime½ lime
    • Ginger beer150 ml
    • Angostura bitters (optional)2 dashes
    • Ice cubesfill the glass
    • GarnishLime wedge
    • GlassHighball glass

    Method

    1. 1Fill a highball glass completely with ice cubes.
    2. 2Pour the ginger beer over the ice, stopping about two fingers below the rim. That leaves room for the rum.
    3. 3Add the juice of half a lime.
    4. 4Add the rum on top of the ginger beer and lime.
    5. 5Finally, optionally add 2 small dashes of bitters on top of the cocktail. Do not stir. Garnish with a lime wedge.

    Bartender tip

That layer is there to look at, not to drink. Once you are ready to enjoy the cocktail, stir it gently through. That is how all the flavours come together in one glass.
