Spirited Union Spice & Sea Salt Rum
Mojito
A refreshing classic with a spiced, botanical rum twist.
Ingredients
- Spice & Sea Salt Rum50 ml
- Fresh lime½ lime, in wedges
- Sugar syrup10-15 ml
- Fresh mint8 leaves
- Soda water30 ml
- Crushed iceplenty
- GarnishMint sprig
- GlassHighball
Method
- 1Cut half a lime into wedges and add them to a highball glass together with the sugar syrup. Muddle the lime to release the juice and the oils from the peel.
- 2Add the mint leaves and the rum. Press the mint gently just once, so the aromas are released without bruising the leaves.
- 3Fill the glass generously with crushed ice and churn well. Stir from the bottom up so everything mixes and chills.
- 4Top up with soda water, add extra crushed ice if needed and garnish with a fresh mint sprig.
Bartender tip
Muddle the lime firmly enough to extract the juice, but do not crush the peel completely. That way you get the fresh citrus oils without making the cocktail bitter.

Spirited Union Pink Grapefruit Rum
Rum Paloma
Light, refreshing and easy to make, perfect as an aperitif.
Ingredients
- Pink Grapefruit Rum50 ml
- Pink grapefruit lemonade150 ml
- Ice cubesfull glass

- 1Fill a chilled highball glass completely with ice cubes.
- 2Pour the Pink Grapefruit Rum over the ice and top up with grapefruit lemonade.
- 3Stir gently once and garnish with a fresh grapefruit wedge.
Bartender tip
Use plenty of ice. A well filled glass stays cold longer and actually dilutes more slowly.
